The second chapter of "Taste of France" brings us to Jura, a region of quiet character, where mountain landscapes, pastoral traditions, and distinctive wines shape a cuisine of depth and subtle complexity.
Nestled between lakes and vineyards, Jura is known for its honest ingredients, rich textures, and unmistakable regional expressions. The menu begins with two emblematic starters: delicate frog legs, gently prepared with Vin Jaune, lemon zest, garlic and parsley, or a warm Comté fondue, served with rustic croutons and seasonal vegetables.
For the main course, guests may choose between Poulet au Vin Jaune, a regional classic where tender chicken meets creamy morel sauce and mashed potato, or lake perch fillet, accompanied by boiled potatoes, sautéed spinach and parsley butter... lighter expression of Jura’s connection to its freshwater landscape.
To finish, Gâteau de ménage, a traditional brioche tart with Chantilly and raspberry, offers a soft and nostalgic ending to the experience.
To accompany the journey, a selection of Jura wines will be available, chosen to reflect the region’s singular character and complement each course with balance and authenticity.
